Risotto

INGREDIENTS: (FOR 6 PORTIONS)

  • 2 cups of rice
  • 1 little bunch of fresh sliced onions
  • 2 spoons of soup butter or margarine
  • 20 gr. of small round beans
  • 1 cup of fresh peas
  • 2-3 small courgettes (sliced)
  • 2 sliced carrots
  • 4 cups chicken soup or 1 chicken cube melted in boiled water
  •  half a cup white wine
  • salt, pepper

 

EXECUTION:

Boil the beans, the peas, the carrot, the courgettes and the onions each of them alone, for about 8-10 min. You strain them. In an open casserole melt half the butter and add the rice. You mix them. Add the wine and the warmed chicken soup until it swallows it all. Put the vegetables in the rice, the left butter, salt, pepper.You can serve it immediately.

CONSUME: As a main dish, dressing in a dish of meat.

HOW TO WASH THEM DOWN: Bread, rustic salad or tomato or tomato with cucumber, wine.
