Spinach with rice

INGREDIENTS: (FOR 6 PORTIONS)

  • 115 gr. Nihaki rice
  • 675 gr. fresh clean spinach
  • 7 spoons pure virgin olive oil
  • 1 big dry sliced onion
  • 2/3 cup hot water
  • the juice of half a lemon
  • 3 spoons sliced dill
  • salt, pepper

 

EXECUTION:

Wash very well the spinach. Put it in a casserole with water. Take it off the fire right when it starts boiling and strain it. In this casserole, roast brown for some minutes the onion with some oil. Add the spinach and mix them a little. Add water, salt, pepper, lemon and at the time it starts boiling add the rice with the dill. Let it boil for about 10 minutes till the rice softens and there is some only of the soup left. Serve.

HOW TO WASH THEM DOWN: Bread, white cheese, tomato salad, rustic salad or tomato or tomato with cucumber, wine.
